INGREDIENTS:
A piece of chicken breast
A King oyster mushroom
Bruised ginger, minced garlic
1-2 hot green peppers and red peppers
COOKING STEPS:
1. Remove the bottom portion of King oyster mushroom, rinse the mushroom off and then cut into dices, coarsely dice the chicken breast up.
2. Rinse the green and red peppers, cut into rings and set aside.
3. In a bowl, drop in diced chicken breast, combine with a pinch of salt, a spoonful of cooking wine, light soy sauce, dark soy sauce, starch and mix evenly.
4. In a wok, pour in bowls of water, after bringing into a boil, add diced King oyster mushroom and let sit for 2 minutes, then ladle out.
5. Heat the wok, add oil, when hot, drop in bruised ginger, minced garlic and stir till fragrant, then combine with diced chicken breast and King oyster mushroom, tossing about over high heat for 3 minutes or so.
6. Season with a spoonful of oyster sauce, let green pepper and red pepper rings join in and maintain the heat for another 2 minutes.
7. Season with a dash of salt, pepper powder, chicken powder and stir evenly. Serve and Enjoy.
