For weight losers: Shiitake mushroom soup with egg and spinach

Ingredients: 
A bundle of spinach, root discarded and segmented
3 dried Shiitake mushrooms, soaked, stem removed and roughly sliced
An egg, beaten and seasoned
Soup stock, preferably homemade
Condiments: Salt, sugar and oil

Easy-to-follow directions:
1. In a wok, add a drizzle of oil, when hot, drop in Shiitake mushroom slices, spinach segments and fry till soft and tasty.
2. Combine with 2 bowls of soup stock and a bowl of water, bring into a boil and then go on for 15 minutes or so on gentle heat.
3. Season to taste with a dash of salt and sugar. Serve and enjoy.
