Ingredients:
2 eggs
100g dried Black fungi
A stick of celery
Minced garlic
Condiments: Salt, peanut oil and sesame oil
Cooking method:
1. Break the eggs into bowl, evenly break up and set aside. Rinse the celery, remove the fibre and cut into segments.
2. Soak Black fungi in advance, tear into pieces and keep aside.
3. Heat the wok, add oil, when hot, pour in egg liquid, when caky, cut into chunks with a food shovel and remove from the wok.
4. Heat the wok, add a drizzle of peanut oil, drop in minced garlic and stir-fry till fragrant, then combine with Black fungus pieces, celery segments and toss over high flame for 3 minutes or so, then let scrambled egg chunks join in and maintain the heat for above 2 minutes.
5. Finally sprinkle with sesame oil and a pinch of salt to season. Serve.
