Cold Enoki mushroom with Black fungus in hot and sour flavor

Ingredients:
A small handful of dried Black fungi
A pack of Enoki mushroom
2 pickled peppers, coarsely chopped
Minced garlic and chopped shallot
Condiments: Salt, sugar, light soy sauce, vinegar, sesame oil, pepper oil

Steps:
1. In a bowl, blend with chopped pickled pepper, minced garlic, a tbs of light soy sauce, vinegar, pepper oil, a pinch of salt and stir evenly.
2. Soak Black fungi ahead of time, remove the impurities and go blanching for 5-6 minutes. Cut the bottom 2-3 cm off of the Enoki mushrooms, then cut them into quarters. Break apart the stuck-together stem pieces from each other by hand, rinse off, go blanching and set aside for later use.
3. In a container, drop in blanched Black fungi and Enoki mushrooms, blend with previously-prepared seasoner and mix well. Enjoy.
