Step 1: Prepare a bowl of rice water, heat up to 30-40 degrees Celsius, then drop in Hericium erinaceus and completely let sit for 2 hours, face down.
Step 2: Remove Hericium erinaceus out, drain off excessive moisture, rinse off under running water and repeat for several times till the moisture is no longer yellow.
Step 3: Cut off the stem of Hericium erinaceus with a scissors, and then tear mushrooms into pieces or portions for stews.
