Ingredients:
2-3 dried Dictyophora indusiata (Bamboo fungi)
1 Luffa cylindrica
1 tomato
A suspicion of bruised ginger and chopped red pepper
Condiments: Oil, salt and starch
Easy-to-follow cooking procedures:
1. Soak dried Dictyophora indusiata in light salt brine, trim off, drain off moisture and then cut into segments.
2. Peel the Luffa cylindrica and slice up, peel the tomato and dice up.
3. In a hot wok, add oil, once hot, drop in bruised ginger, chopped red pepper and stir till fragrant, then combine with sliced Luffa cylindrica, Dictyophora indusiata segments and fry over medium and high flame for 3-5 minutes, then add half bowl of water and go on till evaporated. After that, let tomato dices join in, season to taste with a pinch of salt and thicken the dish with the mixture of water and starch if you like. Enjoy.
