Ingredients:
A handful of Termite mushrooms
2 eggs
A few chopped shallot
A pinch of salt
Cooking directions:
1. Soak dried Termite mushrooms in saline water for 1-2 hours ahead of time, then go blanching for 5 minutes and soak in warm water for another 30 minutes or so. After that, coarsely slice up.
2. In a bowl, beaten the eggs and sprinkle with a dash of salt.
3. In a hot wok, pour beaten eggs into and stir quickly. After it is halfway cooked, combine with sliced Termite mushroom, saute for 2-3 minutes over medium and high flame, then put on a plate and serve while the dish is hot.
