Ingredients:
40g Bamboo fungi
A few ginger slices
1 tomato
An egg
Cooking steps:
1. Soak Bamboo fungi in warm water ahead of time, remove the cap and soak in saline water for another 30 minutes, then cut into segments.
2. Peel the tomato, cut into dices or chunks and set aside. Crack the egg into a bowl and whisk evenly.
3. In a wok, heat the oil, when hot, add ginger slices and stir-fry till fragrant, then drop in diced tomato and frequently toss till soft. After that, combine with Bamboo fungus segments and bowls of water, bringing into a boil.
4. Finally pour in egg liquid, go on the heat for another 2-3 minutes, then lightly season to taste with a dash of salt. Serve and enjoy.
