Braised Pleurotus eryngii with sliced potato

Ingredients: 
2 Pleurotus eryngii (King oyster mushrooms)
1-2 potatoes
A handful of chopped shallot and bruised ginger
Condiments: Oil, soy sauce, oyster sauce, starch and salt

Cooking steps: 
1. Peel the potatoes, cut into 0.5cm-thick of slices, then soak in water to remove the starch element. After that, remove out and drain off excess water.
2. Rinse King oyster mushrooms off, thinly cut into pieces and then go blanching.
3. In a bowl, prepare the sauce with a spoonful of starch, half a spoonful of soy sauce, a dash of salt, half bowl of water and stir evenly.
4. Heat the wok, add oil, when hot, dump with potato slices and fry till golden, then remove with a slotted spoon.
5. Heat the wok again, drop in chopped shallot, bruised ginger and fry till fragrant, then let King oyster mushroom pieces join in and lightly season with half a spoonful of oyster sauce.
6. Combine with fried potato slices and frequently toss with all ingredients.
7. Pour in the previously-prepared sauce and stir till the dish is thick. Serve and enjoy.
