Ingredients:
200g Oudemansiella raphanipes
A handful of chopped shallot, bruised ginger and minced garlic
Condiments: Salt, light soy sauce, starch
Directions:
1. Rinse Oudemansiella raphanipes off under running water, then cut in halves and go blanching, reserve the blanching liquid.
2. In a hot wok, add oil, drop in chopped shallot, bruised ginger, minced garlic and stir till fragrant, then blend with Oudemansiella raphanipes and frequently toss about over medium and high heat.
3. Sprinkle with half a spoonful of light soy sauce, a pinch of salt and combine with half bowl of blanching liquid.
4. In a bowl, mix starch with blanching liquid of Oudemansiella raphanipes and stir well, then pour into the wok and fry evenly. Enjoy.
