Tomato and egg soup with Agrocybe cylindracea

Ingredients:
1 tomato
An egg
100g Agrocybe cylindracea
A handful of chopped onion and bruised ginger

Condiments: Salt, oil and sesame oil 

Steps:
1. Soak dried Agrocybe cylindracea ahead of time till soft, then go blanching and cut into segments.
2. Peel the tomato and coarsely chop up. In a bowl, beaten an egg, stir evenly and put aside.
3. In a hot wok, add oil, drop in chopped onion, bruised ginger and saute till fragrant, then blend with chopped tomato, Agrocybe cylindracea and stir over fierce heat for 2-3 minutes.
4. Pour in 3-5 bowls of water and bring into a boil, then season with a pinch of salt, evenly combine with egg liquid and go on the flame for above 2 minutes. 
5. Before serving, drizzle with sesame oil if you like.
