Pleurotus geesteranus is commonly known as Oyster mushroom, it is frequently used in Japanese, Korean and Chinese cookery as a delicacy. And it is frequently served on its own, in soups, stuffed, or in stir-fry recipes with soy sauce. Pleurotus geesteranus mushrooms are sometimes made into a sauce, used in Asian cooking, which is similar to oyster sauce. The mushroom's taste has been described as mild with a slight odor similar to anise. Pleurotus geesteranus is best when picked young, as the mushroom ages, the flesh becomes tough and the flavor becomes acrid and unpleasant.
Pleurotus geesteranus mushrooms are widely cultivated and used in Kerala, India where a wide variety of dishes are prepared from them. Oyster mushrooms are mainly cultivated in large clear polyethylene bags with buns of hay layered in the bags, and spawn sown between the layers.
Pleurotus geesteranus mushrooms also have beta-glucans, a substance used in therapies against various cancers that helps the immune system fight immunosuppressive or autoimmune conditions. The flesh is full of fiber, vitamins and minerals but does not add many calories to your meal. It provides 25 calories per 1/2-cup cooked serving or 1-cup raw serving. Pleurotus geesteranus mushrooms also have the gift of making the foods around them taste better, while adding only very modest quantities of fat, calories or carbohydrates, thus nicely fit into most diets.
