Storage and processing technique of fresh Shiitake

1. Exhaust of moisture: Just-picked fresh Shiitakes are in high water content. Before the packing, storage and transportation, growers have to arrange the exhaust of moisture.
Airing: Place mushroom caps in a mat (cap upward), air for 3-6 hours in autumn, winter and extend the time to 6-7 hours in spring. In Summer, maintain the time within 1-2 hours.
Hot air: Place mushroom caps in a mat (cap downward), and then put them in a kiln where is 40 degrees Celsius and hot air rotates.
2. Storage: Put Shiitake mushrooms in baskets, remove into refrigeration house where is 1-4 degrees Celsius. Before the shipment, arrange the classification, cut off stipes and go through the ponderation. Then, put them back to refrigeration house and let sit for 2 hours or so. 
3. Transportation: Fresh Shiitake mushrooms should be timely transported after they are properly packed. Under 15 degrees Celsius, mushrooms could be transported in common truck, or refrigeration truck is needed. Preservation time of fresh Shiitake differs from temperature condition to temperature condition. When temperature is at 1 degrees Celsius, mushrooms hold 18 days of preservation time while they keep the freshness at 6 degrees. The higher the temperature, the shorter the preservation time is.
