Ingredients:
400g pumpkin
100g snow peas
250g Enoki mushrooms
800g soup stock
600g water
2g salt
Cooking method:
1. Remove the core of the pumpkin, cut into chunks and then set aside.
2. Wash Enoki mushrooms, break into clumps, cut snow peas into segments.
3. In a pot, pour in soup stock, moderate water and drop in pumpkin chunks, bring to a boil, then lower to slow fire and stew for 30 minutes or so.
4. Combine with Enoki mushroom clumps, let it sit in the pot for 10 minutes on high flame.
5. Finally sprinkle with snow pea segments and bring to a boil again, then season with a pinch of salt. Serve and enjoy.
