Ingredients: Panus giganteus, lean meat, red pepper, bruised ginger, minced onion, salt, cooking wine, light soy sauce, Sichuan peppers, chives
Instruction:
1. Wash Panus giganteus, then tear or cut into pieces.
2. Wash and then dice red pepper, cut lean meat into pieces.
3. Heat the pot, drizzle with moderate oil, drop in some Sichuan peppers and fry till fragrant, then saute lean meat pieces.
4. Pour in a dash of cooking wine and fry till meat pieces turn white, then spoon out and keep aside.
5. Heat the pot again, combine with bruised ginger, minced onion and fry till fragrant, then drop in red pepper dices and Panus giganteus pieces.
6. When Panus giganteus pieces become soft, add meat pieces.
7. Season with a dash of light soy sauce and salt.
8. Garnish with chives, if you like.
