Ingredients: hairtails, Shiitakes, chopped green onion, cooking wine, ginger, garlic, sugar, vinegar, oil, starch
Instruction:
1. Cut hairtails into segments, pickle with ginger and cooking wine for 10 minutes so as to remove the fishy smell. Wash Shiitake, thinly slice caps and discard stems.
2. Heat the pot, pour in moderate oil, dress hairtail segments lightly with the mixture of water and starch and then finely fry. Ladle out when both sides turn golden, then keep aside.
3. Add moderate oil into the pot, drop in chopped onion, minced garlic, Shiitake slices and stir-fry.
4. Combine with fried hairtail segments, pour in moderate water, scatter moderate sugar, salt, vinegar and stew for 20 minutes. Serve.
