Ingredients: dried Shiitakes, Chinese yam, red dates, oil, light soy sauce, cooking wine, Chinese prickly ash, minced hot peppers, bruised ginger, chopped onion, water starch, sesame oil
Cooking method:
1. Soak and wash dried Shiitakes, remove roots, steam for 30 minutes
2. Cut each Shiitake in half, leave soup that is used for steaming Shiitake.
3. Pare Chinese yam, wash red dates and boil for a while.
4. Fry Chinese yam, Shiitake, red dates and drain excessive oil.
5. Fry Chinese prickly ash for a while, ladle out, add minced hot peppers and fry, then add bruised ginger, chopped onion and fry.
6. Add moderate soup that was used for steaming Shiitake, light soy sauce, cooking wine, sugar, salt and bring into a boil.
7. Add fried Shiitake, Chinese yam, red dates and fry with all ingredients.
8. Thicken the dish with the mixture of starch and water, finally add moderate sesame oil.
