Braised oxtail with mushrooms

Ingredients: oxtail 500g, Seafood mushroom 150g, mushroom(moderate), mini Oyster mushroom 100g, Agrocybe cylindracea(moderate), Enoki mushroom 100g, medlar(moderate) 
Condiments: cooking wine, onion segments, ginger slices, salt, white pepper powder
Cooking method:
1. Add cooking wine into water and use it to soak oxtail for 1 hour.
2. Put oxtail into an earthen pot, add much water, moderate ginger slices and onion segments.
3. Bring into a boil and then skim off the foam.
4. Braise in soft fire for 3.5 hours.
5. Add several mushrooms, braise for another 20 minutes, add medlar and braise for 5 minutes.
6. Finally add salt and white pepper powder.
