Chicken tonic soup with Monkey head mushroom

Ingredients: an old Hen, fish maw 150g, 6 or 7 Monkey head mushroom, half of Chinese yam, ginger, salt
Cooking method:
1. Soak and clean Monkey head mushroom, then tear into slices.
2. Give a quick boil to fish maw and cut in dices.
3. Clean, gut and peel chicken, then chop in blocks.
4. Cut ginger into slices.
5. Put all ingredients in a stockpot, add moderate water, bring into a boil, then turn into soft heat and boil for 2 hours.
6. Pare Chinese yam, cut in dices. Put into the stockpot and boil for another 30 minutes.
7. Finally, skim off fat oils and add moderate salt.
